I got the boys to go through various cookbooks (the never ending collection we all seem to gather and never use) and mark what they would like for lunches. Then those ideas that could be made ahead and frozen, we did, having a cooking day they loved.
The bonus is in the mornings they are able to make their own lunch, by selecting a lunch and recess idea from the freezer, which will have thawed by lunch, and makes the morning rush that bit easier. they eat their lunch because they get what they want, and I don't have to sort through food bits they have mangled trying to hide the fact they haven't eaten a thing.
